1. Origin and Authenticity
Where does our matcha come from?
Our matcha is 100% Japanese in origin , grown in the Shimane region, a mountainous coastal prefecture.
Why choose Japanese matcha?
Japanese matcha is cultivated using specific techniques (shading, steaming) that give it a bright green color and a mild, umami flavor. Chinese matcha, which is often more bitter, is dried differently and has a duller color.
How to guarantee that your matcha is authentic?
We import our matcha directly from Japan, without intermediaries. Our suppliers are certified and follow strict production standards . Batches are tested to ensure freshness, purity, and the absence of contaminants .
Is your matcha organic?
We offer both organic matcha and conventional matcha.
Our ceremonial -grade matcha meets organic standards and is certified organic in Japan according to Japanese standards (JAS), guaranteeing cultivation without pesticides or chemical fertilizers. However, since this certification is not directly usable without validation from a French certifying body, we are currently unable to apply the organic label to our products.
What is the difference between ceremonial, premium and culinary matcha?
Matcha is classified into several grades based on its quality, flavor, and use.
Ceremonial grade is the highest quality. It is distinguished by a mild, umami flavor , with a slight sweetness and low bitterness. Its color is a vibrant green , and its texture is extremely fine . This matcha is exclusively intended to be enjoyed neat , whisked with hot water, without sugar or milk. It is used in Japanese tea ceremonies.
Premium matcha is an intermediate quality between ceremonial and culinary grade. It remains of very good quality since it comes from the second harvest. Its taste is balanced , with a slight bitterness, and its color remains vivid , although sometimes a little less intense than that of ceremonial matcha. It can be drunk neat like ceremonial matcha, but it is also suitable for lattes, smoothies or refined recipes .
Finally, culinary matcha is a lower quality, often produced from more mature leaves. Its taste is more bitter and full-bodied , designed to be mixed with other ingredients. Its color is less intense , sometimes tending towards yellow or brown, and its texture is generally less fine . This type of matcha is ideal for cooking and baking , especially for cakes, ice creams, sauces or drinks like matcha lattes with sugar.
👉 Summary :
What does an "umami" flavor mean?
Umami is the fifth basic taste, alongside sweet, sour, salty, and bitter. The word comes from the Japanese "umai" ( うまい) meaning "delicious" and "mi" ( 味) meaning "taste." It is often described as a savory, deep, and lingering flavor that feels full in the mouth.
In ceremonial-grade matcha, umami translates as a natural sweetness without pronounced bitterness. This is what makes good matcha so enjoyable to drink neat!
What are the benefits of matcha?
Matcha is a drink with multiple benefits, ideal for a healthy lifestyle. In addition to its health benefits, it offers a moment of well-being and serenity every day. Here are its main benefits:
🔹 Rich in antioxidants : Matcha contains a high amount of catechins , including EGCG (epigallocatechin gallate) , which helps protect cells from oxidative stress and premature aging.
🔹 Long-lasting energy and focus : Unlike coffee, the caffeine in matcha is absorbed slowly, providing steady energy for several hours, without jitters or a "fatigue crash." This effect is enhanced by L-theanine , an amino acid that promotes focus and relaxation.
🔹 Helps with weight management : Matcha boosts metabolism and promotes fat burning . Some studies show that it can increase energy expenditure and improve lipid oxidation, especially when combined with physical activity.
🔹 Natural detoxification : Its high chlorophyll content gives it detoxifying properties, helping to eliminate certain toxins and heavy metals from the body.
🔹 Heart Health Support : Regular consumption of green tea, including matcha, is associated with a reduction in bad cholesterol (LDL) and blood pressure, thus contributing to cardiovascular protection.
🔹 Oral Health Benefits : Matcha has antibacterial and antifungal properties, which can limit the growth of bacteria that cause cavities and bad breath.
Ube (pronounced ou-bé ) is a variety of purple yam native to the Philippines, known for its naturally sweet flesh and mild, slightly vanilla-like, nutty flavor .
Widely used in desserts, it can be found in creations such as halo-halo , a traditional Filipino ice cream, or in drinks, cakes and lattes colored deep purple 🍧
Ube is naturally rich in fiber , which promotes good digestion and healthy intestinal transit .
It also contains a good amount of antioxidants , useful for fighting cellular aging and supporting natural defenses.
💜 Another advantage: it is naturally sweet , which allows you to reduce added sugars in your preparations.
And since it contains neither caffeine nor theine , you can enjoy it at any time of the day, even in the evening!
2. Use and Preparation
How to prepare traditional matcha?
To fully enjoy the flavors and benefits of matcha, here is the traditional Japanese method:
1️ ⃣ Sift the matcha : Sift 1 to 2 grams of matcha into a bowl (about 1 teaspoon) to avoid lumps and achieve a smoother texture.
2️ ⃣ Add hot water : Pour in about 70 ml of water heated to between 70 and 80°C. Water that is too hot may alter the flavor of the matcha and make it bitter.
3️ ⃣ Whisk vigorously : Using the Chasen (whisk), whisk in a quick "M" or "W" shape until you get a fine, even foam. This helps incorporate air and achieve a creamy texture.
4️ ⃣ Enjoy immediately : Drink your matcha directly after preparing it, to enjoy all its flavors and benefits.
💡 For a milder version, you can try a matcha latte by adding the milk of your choice instead of water.
Is it necessary to use a chaser?
It's not strictly necessary to use a chasen to prepare matcha, but it's highly recommended for optimal results. The chasen, thanks to its bamboo sticks, allows you to whisk the matcha efficiently, creating a light, even foam and avoiding lumps.
You can definitely make your matcha without accessories, but the result may be less frothy and less well mixed than with a chasen, and some lumps may form.
How to clean the matcha whisk (chasen)?
Our whisks are made entirely of bamboo . It is important to wash them in warm water immediately after use , without using a dishwasher or leaving them to soak. Once washed, it should be shaken to remove excess water and then left to dry upside down and in the open air.
For the first use, we recommend immersing it in a bowl of hot water for about 2 minutes so that it becomes more flexible.
3. Consumption and storage
Can you drink matcha every day?
Yes, drinking matcha every day is a great habit , as long as you consume it in moderation and adjust the amount according to your caffeine tolerance. One serving of matcha (1g) contains about 30-70mg of caffeine, less than coffee but more than regular green tea.
One to two cups a day is enough to enjoy the benefits without excess caffeine.
Does matcha contain caffeine?
Yes, matcha does contain caffeine, but its effect is different from that of coffee thanks to its high content of L-theanine, an amino acid that slows the absorption of caffeine and provides stable, long-lasting energy without a spike or jitters.
How do I store my matcha?
To keep your matcha in the best conditions and preserve its freshness, color and taste, the ideal would be to store it in a cool, dry place , away from light and humidity. Ideally, in its can, keeping the lid on and the box tightly closed.
How long does matcha last?
Unopened, it can be stored for up to 12 months after its manufacturing date.
Once opened, it will retain all its nutritional and flavor qualities for up to 3 to 6 months after opening. Beyond this period, it begins to lose its bright green color, umami flavor, and nutritional properties. It may become more bitter and lose its intensity.
